Chef Abu Naser Chowdhury, a Bangladeshi born chef, and cuisinier, started his career as a Commie Chef at Kuwait Regency palace hotel in 1996. After a few years of work, he shifted to the Kuwait Sheraton hotel. In the long pursuit of his successful culinary career, he worked in the Nokaza Seafood Restaurant. (IHG-CROWNE PLAZA HOTEL) as a commie chef to demi chef da party(1998-2001). He also worked in Iraqi army camp outdoor catering for Crown Plaza following the next year. He spent long years with the IHG-CROWNE PLAZA HOTEL Group in Kuwait.

2003-2005 Chef in charge Room service and pool bar kitchen (IHG-CROWNE PLAZA )

2005 – 2010 Al Ahmadi Restaurant Sous Chef (CROWNE PLAZA )

April 2010 – May 2013 Intercontinental Hotels, Crowne Plaza – Kuwait as a Banquet Chef

2013-2015 Executive sous chef & kitchen in charge in Intercontinental Hotel Lagos, Nigeria

Chef Naser returned home in Dec 2014 and joined Spice Catering Ltd – Dhaka as an Executive Chef. He held that position till December 2015 before joining as a Banquet Chef of the Arabic restaurant Olea in Le Meridien, Dhaka in Dec 2015.

In November 2016 he went back to Kuwait for a short period of time to be the Project Opening Chef as well as Executive Sous Chef in Al Faisal Group, Kuwait. In 2017 he returned & again joined Le Meridien.

Now he is the Chef De Cuisine of Olea (the largest banquet of Le Meridien Dhaka).

  • Green/Red Apple 50 Gm
  • Boneless Chicken 80 Gm
  • Carrot 60 Gm
  • Red Lentil 25 Gm
  • Mong Dal 25 Gm
  • Quinoa / Green Burghul 30 Gm
  • Chopped Onion 20 Gm
  • feta cheese 15 Gm
  • Olive Oil 15 Ml
  • Salt 3 Gm
  • Garlic 100 Gm
  • Black Pepper 2 Gm
  • Lemon (fresh) 1 Pc
  • Coriander/Parsley 15 Gm


  1. First, sanitize all the items using a chlorine tablet and freshwater. Also, sanitize your food preparation Surfaces and Equipment with the same process.
  2. Make fine julienne of your chicken and Poach into court bullion stock.
  3. Peel Apple. Make a thin slice and keep them in the vinegar water. Roast the apple a little bit.
  4. Peel the Carrot and make some slice then roast them.
  5. Wash Lentil, Moong Dal, Quinoa / Burghul & soak them in water for 30 minutes. After 30 minute passes, Put aside the Burghul or Quino. Start boiling the Lentil & Mong dal for 10 minutes.
  6. To make the seasoning for the salad: Take fresh garlic and roast a little bit then put in a bottle of olive oil over the Night ( you can keep the oil for a longer period of time for furthermore use).
  7. Mix all the Ingredients – Chicken, Chopped onion Coriander/Parsley, Crushed Pepper, Salt, Olive Oil, Quinoa / Green Burghul, Moong Dal, Red Lentil, Carrot, Lemon Juice, and season them well using the seasoned oil that you have made using the roasted garlic.
  8. To Present: Put a slice or two of the Apples that you have roasted on the bottom. spoon over a little bit of the mixed salad over it. Then again put another two slice of the apple & put some more of that mixed salad over them. Finally, put a couple more of the sliced apple on top with a bit of that salad over it. Sprinkle fresh coriander on top.
